Enjoy summer-fresh produce at its peak

2 large tomatoes, chopped

4 4-ounce fresh white fish fillets (flounder, grouper, tilapia, or snapper)

Salt and fresh ground black pepper, to taste

2 tablespoons olive oil

1 fresh lemon, cut into 4-slices, trim ends off

1 tablespoon dried sweet basil, chopped

2 teaspoons dried parsley flakes
