8  cups chicken broth or stock

1/2 pound Italian sweet sausage, cut into coins and browned

15  ounces fresh cheese tortellini

1 1/2  cups fresh or frozen peas

2  cups fresh baby spinach, trimmed and coarsely chopped

Salt and fresh ground black pepper

Shredded or grated Parmesan cheese
