An array of recipes bring a taste of summer to the table

½ cup canola or coconut oil

1 ½ cups fresh blueberries

1 cup flaked coconut

2-3 cups confectioners’ sugar

2-3 teaspoons fresh lemon juice

In a bowl whisk together flour, sugar, baking powder, and salt.

In another bowl, whisk together eggs, milk, almond extract, and oil. Stir egg mixture into flour mixture. Gently fold in blueberries. Pour into a greased and floured 9 x 13 inch baking dish. Sprinkle with coconut.
