½ pound baby red-skinned potatoes, cut into quarter wedges

½ cup sour cream

Pinch of salt and fresh ground black pepper, to taste

Juice of one lemon

2 teaspoons prepared horseradish

1 tablespoon EVOO, olive oil

12 ounces fresh cooked salmon or drained canned salmon
