Eating right
There's good reason for people who eat eggs to choose cage-free or free-range eggs instead of those from birds confined in cages ("Eat local, eat well," April 2).
Most eggs come from factory farms that cram hens into battery cages-enclosures so small, the birds can't spread their wings or walk. Fortunately, more and more consumers refuse to buy eggs from caged hens. While cage-free doesn't mean cruelty-free, it's certainly a step in the right direction.
And companies are increasingly listening to these concerns. In North Carolina and across the country, hundreds of corporations and universities are adopting policies on the issue. For example, industry giants such as Burger King are now using some cage-free eggs, and chefs like Wolfgang Puck refuse to use any eggs from caged hens at all.
